How to Make This Recipe
- Cook the noodles according to the package instructions. Rinse briefly under cool water and set aside.
- Meanwhile, whisk together the ingredients for the peanut lime sauce. Start with the smaller measurement of water and increase as needed to get the desired consistency. The sauce should be pourable but creamy.
- In a large bowl, combine the noodles, shelled edamame, shredded cabbage, matchstick carrots, and chopped red bell pepper. Toss gently with the peanut lime sauce.

- 1 cup (155g) shelled edamame
- 1 cup (70g) shredded red cabbage
- 1 cup (130g) carrots, cut into matchsticks
- 1 red bell pepper, chopped
- 3 green onions, sliced
- ½ cup (handful) fresh cilantro (or parsley), chopped
- Crushed peanuts (optional for topping)
- â…“ cup (83g) peanut butter
- 1 tbsp (15mL) lime juice (fresh squeezed or bottled)
- 2 tbsp (30mL) orange juice
- 3 tbsp (45mL) low sodium soy sauce (or coconut aminos)
- 1 tbsp (15mL) maple syrup
- 1 tsp (2g) fresh ginger, minced
- 1 clove garlic, minced
- 1 tsp (5mL) sriracha
- 3 – 5 tbsp (45-75mL) warm water (for thinning)
