Ingredients
  

  • 6 oz (170g) uncooked whole grain spaghetti or linguine noodles
  • 1 cup (155g) shelled edamame
  • 1 cup (70g) shredded red cabbage
  • 1 cup (130g) carrots, cut into matchsticks
  • 1 red bell pepper, chopped
  • 3 green onions, sliced
  • ½ cup (handful) fresh cilantro (or parsley), chopped
  • Crushed peanuts (optional for topping)
Peanut Lime Sauce:
  • â…“ cup (83g) peanut butter
  • 1 tbsp (15mL) lime juice (fresh squeezed or bottled)
  • 2 tbsp (30mL) orange juice
  • 3 tbsp (45mL) low sodium soy sauce (or coconut aminos)
  • 1 tbsp (15mL) maple syrup
  • 1 tsp (2g) fresh ginger, minced
  • 1 clove garlic, minced
  • 1 tsp (5mL) sriracha
  • 3 – 5 tbsp (45-75mL) warm water (for thinning)
