These no-bake peanut butter oatmeal bars are chewy, easy to make, and packed with peanut butter and chocolate chips. Each serving has 9 grams of plant-based protein and only takes about 10 minutes to prep.
Line an 8-inch square baking dish with parchment paper.
In a large bowl, mix together the rolled oats, peanut butter powder, chia seeds, and salt.
In a medium bowl, whisk together the peanut butter, soy milk, maple syrup, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until a thick dough forms. Fold in the mini chocolate chips.
Dump the dough into the parchment-lined baking dish and press it down evenly using another piece of parchment paper or slightly wet hands (not dripping) to prevent sticking. Refrigerate for at least 1 hour.
After chilling, carefully lift it out of the baking dish (using the parchment paper) and onto a cutting board. Cut into 16 squares. Keep the squares stored in an airtight container in the refrigerator.
