Ingredients
1⅓cups (120g)rolled oats
½cup (50g)peanut butter powder (such as PBFit)
2tbsp (28g)chia seeds
⅓cup (83g)natural peanut butter
⅓cup (80mL)unsweetened soy milk (or other non-dairy milk)
3tbsp (60g)maple syrup
1tsp (5mL)vanilla extract
Pinch of salt
2 tbsp (30g)dairy free chocolate mini chips (like Enjoy Life)
Instructions
Line an 8-inch square baking dish with parchment paper.
In a large bowl, mix together the rolled oats, peanut butter powder, chia seeds, and salt.
In a medium bowl, whisk together the peanut butter, soy milk, maple syrup, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until a thick dough forms. Fold in the mini chocolate chips.
Dump the dough into the parchment-lined baking dish and press it down evenly using another piece of parchment paper or wet hands (to prevent sticking). Refrigerate for at least 1 hour.
After chilling, carefully lift it out of the baking dish (using the parchment paper) and onto a cutting board. Cut into 8 squares. Keep the squares stored in an airtight container in the refrigerator.
