Ingredients
For the Crispy Tofu
114oz blockextra firm tofu, presseduse chickpea tofu for soy-free version
Preheat the oven to 425°F (220°C). Press the tofu for 10 minutes, then pat dry. Tear into bite-sized chunks or cut into cubes and place in a large bowl.
Drizzle the tofu with the oil and tamari. Sprinkle with the arrowroot starch, panko crumbs, and a pinch of salt. Toss gently until evenly coated.
Arrange the tofu in a single layer on a parchment-lined baking sheet. Bake for 15 minutes, flip, then bake for an additional 14–15 minutes, or until golden brown and crispy.
While the tofu bakes, whisk together the orange juice, tamari, rice vinegar, maple syrup, ginger, garlic, and cornstarch in a small bowl.
Pour the sauce into a non-stick skillet and cook over medium-low heat for 3–5 minutes, stirring frequently, until thickened.
Add the baked tofu to the skillet and gently toss until coated in the orange sauce.
Divide the brown rice and steamed broccoli between two bowls. Top with the orange tofu and garnish with sesame seeds and sliced green onions, if desired.
